RECIPE: APPLE-MARZIPAN ROSES
with puff pastry
Let puff pastry with apple slices and marzipan blossom into pretty roses in your kitchen!
The recipe is simple and quick to prepare:
Ingredients:
(for approx. 8 apple roses)
4 red apples, e.g. Allegro[S]
1 packet of puff pastry (from the fridge)
2 tbsp. sugar
2 tbsp. lemon juice
75 g butter
50 g sourcream
50 g cold raw marzipan paste
2-3 tbsp. jam (e.g. apricot or mirabelle)
500 ml water
Nutmeg
Powdered sugar for the finish
Muffin tins or muffin tray
Preparation:
Preheat the oven to 180 degrees. Line eight muffin tins on a baking tray, alternatively grease eight wells of a muffin tray.
Remove the puff pastry from the fridge. Then wash the apples and remove the cores with a corer. Cut the apples into long strips about 3 cm thick and place in a large pan with 500 ml water, lemon juice and sugar, bring to boil briefly, then turn down the heat and simmer over a low heat for two minutes. When the apple slices can be bent, drain and leave to cool on kitchen paper.
Unroll the puff pastry and use a corrugated pastry wheel to cut eight 3 cm wide strips and – for the leaves – one 4 cm wide strip. Form 8 leaves from the 4 cm wide strip and set aside.
Grate the marzipan and season the sour cream with nutmeg. Spread a thin layer of sour cream on the remaining strips and sprinkle with marzipan. Then place the apple rings along the strips, roll up the strips and press a leave of pastry to the side of the apple roses. Place the roses in the muffin tin and bake in the oven for approx. 30 minutes until golden brown.
Once baked, remove the apple roses from the muffin tins and leave to cool. Heat the jam and brush the apple roses with it. When the jam has cooled, dust with powdered sugar and serve.
Our tipp:
Allegro[S] apples are particularly suitable for this recipe, as the apples have a bright red skin, giving the apple roses a great color. A feast for the eyes!
